Foods of the Future – a discussion with Shalom Daniel, CEO, Mush Foods

The Cornell Institute for Food Systems is pleased to welcome Shalom Daniel, CEO and co-founder of Mush Foods, for a discussion about Foods of the Future.

Mush Foods is an Israeli-based food tech company that grows edible mushroom mycelium to create innovative and sustainable animal-free protein as an ingredient for the food and beverage industry. Based in Tel Aviv, the startup uses fermentation and AI to efficiently produce its fungi-based ingredient, which it says could make everything from plant-based dairy to vegan steak tastier, healthier, and more sustainable.

The company was founded in 2021 by Shalom Daniel together with the Migal Galilee Research Institute’s Professor Dan Levanon and Dr. Idan Pereman, as well as Strauss’ The Kitchen FoodTech Hub.
